I don't do this often, probably because I'm not the best cook in the world. But, I made this super easy dish for supper tonight and everyone is on their second helping of it. If you need something easy - print this out:
Creole Black Beans
1 to 2 lb smoked sausage, cut into 1" slices
3 cans black beans, drained
1 lg onion chopped
1 lg green pepper chopped
1 cup chopped celery (yes - add it even if you think celery is gross)
3 cloves minced garlic
1 chicken bouillon cube
1 can tomato sauce (8 oz)
1 cup water
Brown sausage in a skillet over medium heat. Drain well and transfer to crock pot. Combine remaining ingredients in crock pot. Cover and cook on low 8 hours or on high 4 hours. Serve over cooked white rice.
Apparently there is something about cooking the sausage for a long period that makes a difference. We used smoked beef sausage. By the time it had cooked a few hours, it was tender and just scrumptious. Pretty danged good.
